Wilton Benitez owns Granja El Paraiso-92 in the excellent coffee growing region of Colombia, but before he was a full time coffee genius, he was a chemical engineer. He uses that knowledge to process the amazing coffee varieties he grows in super specific ways that bring out the best they have to offer.

For this one, he takes Caturra variety coffee and applies anaerobic fermentation to the cherries both before and after pulping, uses specific yeast to bring out specific flavors in the fermentation, and finishes with a thermal shock process: washing the coffees first with warm water to fix certain aromatics that have developed in the fermentation, then quickly cooling.

The result is a coffee absolutely stuffed with fruit flavor, with notes of strawberry, lychee, mango, and a touch of almond sweetness

Aaron MacDougall discovered his calling in a Honolulu coffee shop after leaving a career in finance. After years of learning, competing, and roasting, he moved back to the Boston area and founded Broadsheet Coffee Roasters in 2017.
