The mad geniuses at Methodical have put together several wild coffees, two of them co-fermentations with apple and cinnamon, to create a truly one-of-a-kind coffee. They combine co-ferments from two fermentation superstars—a cinnamon co-ferment from Sebastian Ramirez and a green apple co-ferment from Jairo Arcila—with a tasty washed coffee from a group of women producers in Quindio. The result has the complementary apple cinnamon flavors from the co-ferments but also notes of strawberry and brown sugar because even without co-fermentation these are all very, very good coffees.
