Today we're pleased to introduce you to Florida’s The Roasted Record. Founder and co-owners Mike and Stef share the story behind their one-of-a-kind roastery and record shop.

First, tell us a little about yourself—whatever you’d like to share.

Although Mike Mann founded the company, his wife Stef Hutton has been there since the beginning—“one way or another,” as Blondie might say. Together, they share a love of coffee, music, and travel, while sharing in parental guidance for Stef’s son, Josh.

Mike is a professional golfer and passionate cyclist, motorcyclist, musician, and motorsports enthusiast. Stef is a thoughtful reader, bird-watcher, hiker, and family adventurer. One of their favorite shared hobbies is visiting coffee shops around the country to experience how different people interpret the craft.

At Trade, we’re all about origin stories. How did Roasted Record begin?

The Roasted Record began on the front porch of our founder, Mike Mann, roasting on a one-pound Behmor roaster while listening to vinyl records. Originally conceived as a blog—hence the name “The Roasted Record” (a play on keeping a record of roasting and the sounds of vinyl)—Mike quickly began roasting more coffee than he could drink. He started giving it to friends, and after receiving several requests, he decided to officially start a business. From those humble beginnings, the company has grown into a nationally recognized roaster with thousands of batches produced and several appearances in national roasting competitions.

What’s your philosophy when it comes to sourcing and roasting coffee?

Mike Mann personally oversees all coffee sourcing. This part of the process is critically important to us—arguably the most important factor in producing excellent coffee. We partner with small, quality-focused importers who spend real time with producers in the field, rather than relying on larger importers with less hands-on interaction.

Recently, we purchased coffee trees in Colombia from producer Andres Cardona, with our first harvest expected in November 2025. This relationship allows us to be deeply involved from seed to cup. Sourcing is our favorite part of the business—it’s where we explore unique varieties, diverse processing methods, and the stories behind each producer. We often showcase the same coffee processed in multiple ways side-by-side to highlight how different methods impact flavor.

Currently, we’re offering both washed and honey-processed Chiroso, along with naturally processed Papayo varieties, sourced through our partners at Unblended Coffee Importers.

 

Your visual identity really stands out. What inspired the branding and design behind Roasted Record?

Our visual aesthetic draws inspiration from mid-century modern design and the warm tones of 1960s and 70s music culture. One of our centerpieces is a baby blue La Marzocco FB80 espresso machine, reminiscent of the styling of American cars from the ’50s and ’60s. We have a deep connection with music, especially the tactile, intentional experience of vinyl records.

 

We know an ‘analog approach’ is at the heart of what you do. How does that show up in your daily operations or long-term mission?

“The Analog Approach” reflects our commitment to doing things with intention—not rushing to the quickest or most convenient method. It’s about the joy (and occasional inconvenience) of flipping a record to hear the whole album. That same hands-on attention shows in our roasting process, where every batch is monitored closely—managing roast curves, airflow, and temperature manually. Automation could make things easier, but we believe doing it by hand produces better coffee.

Digital is 1s and 0s. Analog is everything in between. It has nuance. It’s authentic. That’s what “The Analog Approach” means to us.

Looking ahead, what’s exciting you most this year—new coffees, projects, collaborations, or goals?

What excites us most about the coming year is our growing relationship with Unblended Coffee and the trees we’ve planted in Colombia. This collaboration allows us unprecedented control from the very beginning of the coffee’s journey. We’re involved in farming methods, harvesting, and even get to dictate processing styles directly at origin—all with the guidance of an incredible producer, Andres Cardona.

What are three things you love most about running a roasting business?

Having a café connected to our roastery lets us immediately share exciting new coffees with our community. There’s something special about roasting a batch, walking it straight to the café, and telling customers it will be ready in a few days. Their excitement when a new profile drops, and their feedback, are some of the most rewarding parts of what we do.

We’re also inspired by the stories behind our coffees—many of which come from producers overcoming conflict, economic hardship, or environmental adversity. Knowing what it takes to bring that green coffee to us deepens our appreciation for every bean we roast.

We also enjoy experiencing how other roasters interpret the same green coffee. Tasting different approaches, especially through roasting competitions, has taught us just how much the roasting process shapes the final cup. It’s a constant journey of learning.

We have to ask: how do you make coffee at home?

At home, we brew using just about every method available, but our go-to is a simple V60 with Third Wave Water. It’s clean, precise, and easy to dial in. We’ve got all the gear—an EK43 with standard burrs, a Fellow Ode upgraded with SSP burrs, and a Fellow Stagg EKG kettle.

We also regularly drink other roasters’ coffees to stay inspired and curious. We’re subscribers to Trade, so new bags arrive every few days for us to explore.

 

For someone discovering Roasted Record for the first time, which coffee would you recommend—and why?

If you haven’t tried our coffee before, our most popular option is the HiFi Espresso. Other great introductions are part of our Turntable Series: The 33 (light), The 45 (medium), and The 78 (dark).

One of our favorite current offerings is a single-lot coffee from Duverney Arias—a wonderful everyday cup with a real story behind it. We purchased his entire harvest this year, so this lot is exclusively available from us.
